Summer Radish Slaw
Serves: 6
Ingredients
½ lb. rainbow colored radishes, cut into matchsticks (julienne)
2-3* cups of baby arugula or baby spinach
1 cup carrots, grated or julienne (matchstick shapes)
½ cup thinly sliced red onion, spring onion or torpedo onion
2 T cilantro, mint or parsley leaves, finely chopped
2 T olive oil, extra virgin and cold pressed
½ t maple syrup or raw agave nectar
2 T freshly squeezed lemon juice
unrefined sea salt and pepper to taste
Directions
1. Combine first five ingredients in a large bowl and set aside.
2. Whisk together next three ingredients in a small bowl and combine with the salad.
3. Add sea salt and pepper to taste. Enjoy!
* Use 3 cups if you want it to be more like a green salad and less like a traditional slaw.
